Oxtail Stew
Oxtail Stew is an Amazing stew made with its own bone broth, sweet potatoes, carrots, celery, tomato paste, mushrooms.

  1. Oxtail
  2. Beer any kind it is to give the acid and flavor component.
  3. Carrots
  4. Celery
  5. Sweet Potatoes
  6. Tomato Paste
  7. Can of ro-tel medium heat Tomatoes and Peppers
  8. 2 large cans of Mushrooms

Ok take your Oxtail and put it on a rack on a cookie sheet and roast it in the oven at 425 for at least 30 minutes this will roast off some of the fat and help bring color and flavor to the broth.

Once the Oxtail is roasted put them in your Dutch oven, Now add your beer and water to cover the Oxtail. Bring to a boil and reduce to simmer. Let this simmer until the meat is falling off the bones. Keep your water topped up.

Once the meat is falling from the bone remove all the meat, pick the bones clean and put the meat in a container in the fridge. Now put your bones back into the pot and top off your water and start simmering your bones. This will take until the bones are soft once you can take a bone and smash it with your fingers its done.

I normally put the lid on the Dutch oven and once it cools I put it in the fridge until the next day the fat will come to the top and you can just pull it up like a fat puck and toss it. There is going to be so much gelatin that when you pull the fat from the top it will jiggle like Jell-O. This is a Very Good Thing. That means you got all the good things from the bones your body craves.

Bring the Broth back to a simmer and then. Dip or Strain out all the bones. Add back your meat Chop your carrots celery and let it simmer for 20 minutes. Then peal and chop your sweet potatoes and put them in the broth until tender.

You have been checking your Salt and spice needs right? Adding vegetables will require adding back spices and salt. Ok once your sweet potatoes are tender add your tomato paste, Mushrooms and ro-tel stir to combine and let it simmer for 15 minutes. Once your 15 minutes has passed you’re ready to eat. Oxtail Stew gets better every day reheated.
